Originally built between
1590 -1603, Schloss Velden in Carinthia, Austria has long been a preferred
destination of the international jet set, royalty, dignitaries, movie stars and
writers. But recently, the 105-room boutique ski resort is making waves for a
different reason.
Its fine dining restaurant Schlossstern is garnering rave reviews from press and critics alike. Within a
few months of opening, Schlossstern,
with Chef Silvio Nickol at the helm, has
garnered its first Michelin star and top marks from Gault Millau Austria.
Nickol, who bagged a Newcomer of the Year award in the nation’s most popular
food magazine, has years of experience that belied his youth, having honed his
skills in the kitchens of Michelin and Gault Millau rated restaurants.
His
signature dishes ‘Harmonie of Red Mullet with macadamia nut flavored spinach’
and ‘Symphonie of Canadian lobster with herb sour cream’ show off Nickol’s
mastery of sauce layering from his humble beginnings as a saucier.
Artfully
rendered and tastefully garnished with ingredients freshly obtained from the
Velden farmers, the dishes showcase the epitome of Austrian culinary. The
restaurant also offers a seven-course gourmet menu and a vegetarian
three-course menu.
