Internationally acclaimed as one of the best restaurants in Asia, Bukhara offers sophisticated yet ethnic Indian fare amidst rustic interiors. Its cuisine, which is inspired by the traditions of the Northwestern frontier, has delighted visiting heads of state, celebrities and royalty alike. In a bid to encourage diners to savor the restaurant’s juicy kebabs with their hands, cutlery is withheld and aprons are provided.

Chef JP Singh helms a group of 16 chefs who grill kebabs to perfection in Bukhara’s open kitchen. All chefs undergo extensive training in the art of marinating and cooking in a tandoor, a traditional Indian clay oven that provides better retention of all juices and flavors. The menu, developed by the late Master Chef Mandanlal Jaiswal, is still followed meticulously.

Signature Dishes

Bukhara is famed for its succulent kebabs: highlights include the Sikandari Raan (Marinated Whole Leg of Spring Lamb) and Murgh Malai Kebab (Creamy Chicken Kebab). Another favorite is the restaurant’s Dal Bukhara. This rich, creamy black lentil version apparently has many fans, including former US President Bill Clinton.
