Chef Nobuyuki "Nobu" Matsuhisa is recognized for his innovative Japanese fusion cuisine. Classically
trained as a sushi chef in Tokyo, he has also worked in many countries, including Peru, Argentina
and the United States of America (Alaska). Incorporating the culinary styles of each country he visited saw the creation of an
entirely new style in Japanese cuisine, celebrated the world over with his chain of successful,
internationally acclaimed restaurants.
NOBU InterContinental Hong Kong is known for its unique combination of traditional Japanese cuisine and South American ingredients. Highlights include Fresh Yellowtail Sashimi with Jalapeño, Black Cod Saikyo Yaki, Toro Tartar with Caviar, Sashimi Salad with Matsuhisa dressing and Rock Shrimp Tempura with Creamy Spicy Sauce. NOBU InterContinental Hong Kong also features a special five-course Yu-Yake menu, and special dishes incorporating popular local ingredients like fresh abalone and homemade XO sauce.
