Profile: Bruno Jamais Resturant and Club

From age 15, Bruno Jamais was involved in the restaurant business, helping out in his father's restuarant, and then moving on to other Parisian establishments. The 47-year-old accumulated a wealth of experience, having worked under culinary greats like Daniel Boulud and Alain Ducasse. But it was Daniel who taught Bruno English, and the ropes of becoming a successful restaurateur, while serving as maitre d at Daniel's restaurant. Housed in a beautiful 4,500 square foot townhouse on East 81st Street that was formerly the Parioli Romanissimo, Bruno Jamais' clubby dining room atmosphere designed by celebrated architect Tony Chi, harks back to the good old days of the legendary Regine's nightclub, with DJ music and live bands. But Bruno Jamais Restaurant and Club is more than a posh restaurant with exceptional food and wine. It is the pulse of Manhattan dining and nightlife.

The Chef

Prior to joining Bruno Jamais as master chef, John Keller has had successful stints at Nobu and Le Bernardin and a restaurant in Brooklyn. With a huge appetite for knowledge, he absorbed everything he could while at Nobu and later at Le Bernardin, under the tutelage of master chef Eric Ripert. While these influences show through his creations for Bruno Jamais, Keller was also able to inject his personal style and creativity into the mix.

Signature Dishes

Bruno Jamais' signature dishes are lobster brûlée, the moonfish entrée and chocolate soufflé. Keller's philosophy is, "simple elegance without overdoing it."
