Valentine’s Day: Restaurants to celebrate the occasion at in 2019

    French-Japanese restaurant Le Binchotan has conceptualised a five-course line-up for the special day in reference to the different stages of love.

    Guests are started off with a cheeky play on words, ‘U n I’, featuring generous lobes of uni crowning a shooter glass of dashi jelly layered cauliflower mousse.

    The second course, named ‘E M O’, is a nod to inevitable conflict with an unexpected communion of two contrasting elements, such as crunchy thrice-cooked Japanese sweet potato as well as tuna tartare,

    Following this is the third course, ‘Comfort’. The theme of this dish is as the name implies. Guests will be served with a soothing chicken consommé soup, prepared with chicken grilled over binchotan. The clear broth takes on a dark hue and a slight smokiness while duck rillette dumplings add a gentle textural contrast to the dish.

    The fourth and main course, ’TLC’, stars a rich Toriyama wagyu striploin. The extravagant marbling is complemented by tender binchotan-grilled leeks sous-vide in chicken stock and a sweet onion compote.

    The meal finishes ‘BitterSweet’, with a rich velvety dark chocolate cremeux, enhanced with hazelnuts and served with a scoop of tangy yoghurt sorbet and garnished with a sweet and smoky beetroot puree and crunchy beetroot chips.
